A Cupcake A Day Keeps The Sample Sales Away

Whenever I go back to Wales, even before I walk through the door I'm hounded by my family to make my yummy Carrot Cake Cupcakes, which are naughty but terribly addictive and so easy to make!!


All you need is:
175g light brown muscovado sugar
100g wholemeal self-raising flour
100g self-raising flour
1 tsp bicarbonate of soda
2 tsp mixed spice 
zest 1 orange
2 eggs
150ml sunflower oil 
200g carrots, grated 


Heat oven to 180C/160C Fan/gas 4 and line a 12 hole muffin tin with cupcake cases. In a large mixing bowl chuck the sugar, flours, bicarbonate of soda, mixed spice and orange zest and mix. Whisk together the eggs and oil, then stir in the carrots. 


Then mix the dry ingredients with the carrot, oil and egg mix, once mixed into a sludgy mess spoon into the cupcake case evenly. 



Bake for 20 - 22 minutes until golden and risen, the trick to see if it is cooked in the middle; slide a knife into the cupcake and if it comes out clean that little baby is ready to be eaten!  Once cooked place the cupcakes on a wire tray to cool.


The icing is my favourite thing  -
For the icing
100g butter, softened
300g soft cheese (cream cheese)
100g icing sugar, sifted
1 tsp vinilla extract

For the icing, beat the butter until soften; you'll need to get some elbow grease in here.. its tough beating as it needs to be beautifully soft. Then beat the soft cheese, sifted icing sugar and vanilla. Use a palette or cutlery knife to swirl the icing on top of the cupcakes, slap it on and don't skimp the more the better! 


At this stage it is almost impossible not to eat one when no one is looking.. hot from the oven smothered in cold creamy icing!






My favourite thing, is to cook them just before tea time and then this gives you the perfect excuse to settle down with a cuppa and a freshly hot baked carrot cake cupcake! #Dribble!

Highly Addictive. A whole tray will make you feel sick.
