This weekend in hope for a beautiful sunny jubilee, here is the recipe for my yummy pork belly BBQ ribs and hedgehog tatties!!
All you need is;
Pork belly
Pork belly
(Marinade)
4 tbsp Soy Sauce
2 tbsp honey
2 tbsp sesame seed oil
2 tbsp Sherry
1 clove of garlic, crushed
Small amount fresh ginger, finely chopped
1. In a deep dish put all the ingredients for the marinade in together and stir. Add the pork belly and marinade for 2 hours, or over night if possible - the longer the better!
2. Once marinated, place on the BBQ and cook for 3 hours with the lid of the BBQ on. So make sure that BBQ is well stocked and very hot.
For the Hedgehog potatoes;
Baking potatoes
Sea salt
Red pepper corns
Sprigs of fresh rosemary
Sprigs of fresh thyme
Light olive oil
1. Cut the baking potatoes horizontally with 5cm between each cut and not all the way through so that the knife finished three quarters the way through the tatty.
2. Rub olive oil all over and inside the slits.
3. Insert the sprigs of Rosemary and thyme into the slits.
4. Rub the sea salt and pepper corns all over and inside the cracks.
5. Bake in an over at 180C for 1 hour, or until soft - depending on the size of the potato.
Finally once the pork belly has been cooked for 3 hours, serve with a fresh salad and of course a gorgeously iced glass of wine!
This may be quite a lengthy cooking time but believe me it's well worth the wait .. A BBQ fit for a queen! ;)
